We all need a reliable baked sweet potato recipe that is fail-proof and versatile. This easy oven roasted sweet potato recipe is perfectly sweet, fluffy in the center and caramelized around the edges. With just oil, salt and pepper, you have an easy and healthy recipe.

Baked sweet potato halves

Baked sweet potatoes are so filling and scrumptious. This is the BEST way to make them! Cutting the sweet potato in half saves baking time and creates so much more flavor! Simple ingredients like olive oil, salt and pepper bring out sweet nutty flavors and the crispy caramelized edges are so delicious. 

Sweet potatoes are also healthy, high in vitamins and fiber. Though they are starchy and sweet in flavor, sweet potatoes are low on the glycemic index making them blood sugar friendly. This recipe is versatile and a great base to serve plain or topped with other bright flavors.

Baked sweet potato halves

Ingredients for Healthy Baked Sweet Potato 

  • Sweet Potato: Cut in half, for a soft center and crispy edges. Choose sweet potatoes similar in size for even baking.
  • Olive Oil: Helps to crisp up the edges. You can also use avocado oil or coconut oil.
  • Salt and Pepper: Simple seasonings to bring out the sweet nutty flavors.

How to Make Oven Roasted Sweet Potato Halves

  1.  Preheat oven to 400F.
  2. Line baking sheet with parchment paper.
  3. Scrub and clean sweet potatoes to remove dirt and debris from the skin. Dry them out.
  4. Cut sweet potatoes in half. Drizzle with oil and sprinkle with salt and pepper. 
  5. Place cut side down onto baking sheet that is lined with parchment paper. 
  6. Bake for 30-40 minutes until fork tender. The skin will become wrinkly when it is cooked through. The longer you bake, the crispier the edges become. For crispier edges, bake closer to 40 mins.

Tips

  • For crispier edges, bake longer for 40 mins.
  • Store in refrigerator for up to 3 days in air tight container.
