This tasty and healthy buffalo chicken stuffed sweet potatoes recipe is an easy weeknight dinner full of flavor and high protein. Simple ingredients create big bold flavors of sweet, spicy and tangy. It’s a complete delicious meal with baked tender sweet potatoes, shredded chicken breast mixed with tangy buffalo sauce and a drizzle of ranch. This recipe is perfect for meal prep or game day.

What Makes this Buffalo Chicken Sweet Potato Recipe So Good?

  • Simple Ingredients: No fancy shmancy ingredients that require you to drive across town for. This recipe if proof that simple ingredients are all you need to create delicious balancing flavors.
  • High-Protein: Chicken is high in protein, and great at keeping you full for longer. Very macro friendly.
  • Nutrient Dense: Sweet potatoes are high in nutrients and fiber, making it a great carbohydrate source. Though sweet potatoes are starchy,  they are a lower glycemic food. I prefer to cut the sweet potatoes in half instead of stuffing them because they cook faster, develop a caramelized layer and are lower in calories/ perfect serving size.
  • Meal-Prep Friendly: Plan ahead for the week with delicious lunches and dinners. This recipe stores well in the fridge for up to 5 days.

 Ingredients

If you know me, you know that I try to make healthy recipes easy and less complicated. Nutrition matters but it can be made simple, and this recipe uses simple ingredients that pack BIG flavor!

  • Chicken breast– Cook it in the method you prefer. Use rotisserie chicken that’s precooked and ready to go. Bake it, or boil it.  If I need to cook raw chicken breast, Instant Pot is my favorite quick way to cook juicy tender chicken breast. I provide a detailed recipe HERE. 
  • Buffalo sauce– Pick your favorite brand. The nice thing about this recipe is that different brands have different levels of heat. If you like it spicy, choose a spicier brand. I prefer Primal Kitchen Buffalo Sauce because they use clean ingredients and it’s mildly spicy that my kids can eat it!
  • Mayonnaise – A little bit of mayo balances the acidity and heat of the buffalo sauce, making it creamy and delicious.
  • Spices- Garlic powder and salt
  • Sweet potato– Halved and baked to a perfect tender soft center and caramelized edges. 
  • Optional Toppings– Green onions, chives, cilantro, ranch dressing, blue cheese dressing

How to Make Buffalo Chicken Stuffed Sweet Potatoes

  1. Bake Sweet Potatoes. Preheat oven to 400F, line a baking sheet with parchment paper. Cut sweet potatoes in half lengthwise, drizzle with olive oil, salt and pepper. Place cut side down on baking sheet and bake for 30-40 mins until fork tender.
  2. Shred/prepare chicken breast. In a bowl shred 2 cooked chicken breast with fork, add buffalo sauce, mayonaise, galic powder and salt. Mix well to combine. 
    *** If you are using raw chicken breast, cook it in your preferred method. Use this Instant Pot chicken breast recipe for a quick tender chicken breast perfect for shredding. 
  3. Layer on the goodness. Once sweet potatoes are baked, make a small cut in center and top with buffalo chicken mixture and sprinkle on your favorite toppings such as cilantro, green onions and drizzle with ranch.

Serving Suggestions

Serve with a simple salad or vegetable like this easy oven roasted broccoli, that can be baked at the same time as the sweet potatoes.

Storage

Store in airtight container in refrigerator for up to 5 days.

  • 2/3 cup Buffalo Sauce or more
  • 1 Tbsp Mayo
