Buffalo Chicken Stuffed Sweet Potatoes

- 4 Sweet Potatoes cut in halves
- 2 Chicken Breast, cooked/shredded about 3.5-4 cups
- 2/3 cup Buffalo Sauce or more
- 1 Tbsp Mayo
- 1 tsp Garlic Powder
- Salt
Bake Sweet Potatoes. Preheat oven to 400F, line a baking sheet with parchment paper. Cut sweet potatoes in half lengthwise, drizzle with olive oil, salt and pepper. Place cut side down on baking sheet and bake for 30-35 mins until fork tender. Shred/prepare chicken breast. In a bowl shred 2 cooked chicken breast with fork, add buffalo sauce, mayonaise, galic powder and salt. Mix well to combine. *** If you are using raw chicken breast, cook it in your preferred method.
