- Buffalo sauce– Pick your favorite brand. The nice thing about this recipe is that different brands have different levels of heat. If you like it spicy, choose a spicier brand. I prefer Primal Kitchen Buffalo Sauce because they use clean ingredients and it’s mildly spicy that my kids can eat it!
- Mayonnaise – A little bit of mayo balances the acidity and heat of the buffalo sauce, making it creamy and delicious.
- Spices- Garlic powder and salt
- Sweet potato– Halved and baked to a perfect tender soft center and caramelized edges.
- Optional Toppings– Green onions, chives, cilantro, ranch dressing, blue cheese dressing
How to Make Buffalo Chicken Stuffed Sweet Potatoes
- Bake Sweet Potatoes. Preheat oven to 400F, line a baking sheet with parchment paper. Cut sweet potatoes in half lengthwise, drizzle with olive oil, salt and pepper. Place cut side down on baking sheet and bake for 30-40 mins until fork tender.
- Shred/prepare chicken breast. In a bowl shred 2 cooked chicken breast with fork, add buffalo sauce, mayonaise, galic powder and salt. Mix well to combine.
