This breakfast sweet potato scramble is the perfect breakfast that comes together quickly and is perfect for high protein meal prep. With a few simple ingredients and one pan, you can enjoy this savory and filling breakfast all week!

If you are focused on getting enough protein in your diet, this egg and sweet potato scramble is the perfect way to start your day. The eggs and sausage are high in protein and the sweet potato is a low glycemic carbohydrate and high in fiber, which helps to keep your blood sugar balanced throughout the morning. The ingredients in this Paleo breakfast sweet potato scramble are perfect for meal prep, on the days when you want to cook once and eat all week.

Sweet Potato and Sausage Breakfast Scramble Ingredients

The combination of ingredients in this breakfast egg scramble are very harmonious, but feel free to substitute with ingredients you may or may not have on hand.

  • Eggs: They provide a high source of protein and healthy fat, not to mention, eggs are savory and delicious.
  • Sweet Potato: A healthy source of carbohydrate and fiber.
  • Breakfast Sausage: Seasoned breakfast sausage adds so much flavor and depth to this recipe.
  • Bell Pepper: Great source of antioxidants and vitamins. Pairs very well with sausage and sweet potato.
  • Spinach: For added vitamins, and wilts perfectly in this recipe.
  • Green onion: Adds a fresh kick and really brings out the flavors
  • Spices: Cumin, Paprika and Garlic powder are the perfect harmony of savory comfort.

How to Make this Paleo Sweet Potato and Egg Scramble

Made with nourishing and wholesome ingredients, this breakfast comes together in just one pan.

  1. Scramble the eggs first in 1T of oil or ghee. Cook the eggs until cooked through and set aside into a dish.
  2. Cook sausage in the same pan, on medium heat for 5-7 mins. Cook the meat until half way cooked though.
  3. Add sweet potato to half cooked sausage. Reduce heat to medium low, and cover with lid. The fat and flavor from the sausage will infuse the sweet potato. Cook for about 10 mins, stirring every 3 minutes.
  4. Add red bell pepper and spices to the pan. Cook for another 3-5 minutes.
  5. Add spinach to the pan, cover with lid. Allow to wilt for about 2 minutes. Turn off heat.
  6. Stir in the scrambled eggs into the pan with the rest of the ingredients. Serve and enjoy!

Storage and Tips

TO STORE: Refrigerate in airtight container for up to 5 days

REHEAT: Reheat the serving size in the microwave or in a skillet on medium/low heat for 5 minutes. 

TO FREEZE: Freezer safe container or freezer safe bag for up to 3 months. To thaw, leave in fridge overnight, then reheat either in microwave or skillet.

Ingredients
  

  • 8 Eggs
  • 1 tbsp Oil or Ghee
  • 1 lbs Breakfast Sausage
  • 1 Large Sweet Potato peeled, diced into 1/2 inch cubes
  • 1 Red Bell Pepper diced
  • 2-2.5 cup Spinach packed
  • 1/2 tsp Salt
  • 1/2 tsp Garlic Powder
  • 1/4 tsp Paprika
  • 1/4 tsp Cumin
  • 1/4 tsp Pepper
  • 2 Green Onions sliced

Instructions
